What is this?

Don't you hate scrolling through a rambling post when you just want the recipe at the end?  I don't need to explain myself to you.  You can try this for yourself and see why I bothered to post it here.

Ultimate Keto Sweetner Blend

2 tsp Sweet Leaf Stevia (Powdered Stevia)
4 tsp Inulin
1/3 cup Monk Fruit
1 cup Xylitol
1 cup Swerve

Combine all ingredients in a blender and blend to powder.  This will fit in a quart sized container with a little room to spare.  Use as a 1 to 1 replacement in recipes or adjust as desired. 

Keto Protein Pancakes

2 Tbs psyllium husk powder
2 Tbs coconut powder
3 Tbs Protein powder
1 tps baking powder
1/4 tsp Salt
3 Tbs sweetner blend
1 tsp cinnamon
1/4 cup oil
2 eggs
3 tbs heavy whipping cream

Grind the psyllium husk powder in a food processor with the coconut and protein powder.  Mix all ingredients in small to medium bowl and let sit for a minute.  Cook over low heat and as soon as you see any kind of bubble it is time to flip it.  It will be tricky to flip but it will solidify more on the second side.  Serve with your favorite toppings.  Usually makes about 6 pancakes.  About 1.1 net carbs per pancake.  More if you like to sprinkle chocolate chips in while cooking.

Keto Hot Chocolate

2 Tbs Sweetner
3 Tbs Cocoa Powder *
2 Tbs chocolate Whey Powder
4 Tbs Butter
1 Cup Cream
1/2 tsp Vanilla
1/2 Cup water

Mix dry ingredients in a container.  Melt butter in sauce pan and add dry ingredients and mix well.  Add cream, water and vanilla while stirring to incorporate.  Makes 2 servings.  About 4 net carbs per serving.  *We use a cocoa powder we found that is 0 net carbs, it is expensive but we love chocolate.
